Sichuan Black Pepper Blend

Sichuan or Szechuan peppers are indigenous to the Szechwan province of China. Although they look similar to the familiar black peppercorns, they actually aren’t peppers at all. They are the dried berry of a tree of the rue family, the prickly ash, that can be found across China, Japan, the Himalayas, and North America. In Japan the ground dried leaves  are referred to as sansho and the whole fresh leaves are called kinome, which are sometimes also served pickled. Besides adding a pleasant spice to any dish, Sichuan peppers include a number of important minerals including potassium, copper, manganese, phosphorus, zinc, iron, and selenium. Moreover, Sichuan peppers are also known to have beneficial effects on the digestive system.

Ingredients:

  • 2 Tbs ground Sichuan peppers
  • 2 Tbs fresh ground black pepper

Directions:

Combine thoroughly and store in airtight container.
