Avocado and Roasted Garlic Green Goddess Dressing
I have had several requests for the Green Goddess Dressing. This one has roasted garlic. Garlic, among many other things, has been show to positively impact blood lipid profiles. Roasting the garlic concentrates the sugars, transforming the bulb into a caramelized, sweet, soft ingredient with deep flavor. So here it is! Easy and scrumptious; it’s a perfect complement to that garden-fresh veg….
- 2 avocados
- 3 chopped scallions, white and green parts
- 1 cup chopped fresh basil leaves (about 1 oz.)
- Juice of 2 lemons
- 1 Tbs. roasted garlic (more if you like, I use a whole head)
- 2 tsp. anchovy paste
- 2 tsp. kosher salt
- 1 tsp. freshly ground black pepper
- 1 Tbs. champagne vinegar
- 1 tsp. honey
- 1 cup good olive oil
Place all ingredients in a food processor and blend until smooth.
